Honey-Glazed Chicken with Apples and Dates

Ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 2 large apples, cored and sliced
  • 1/2 cup pitted dates
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh thyme (optional, for garnish)

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. In a small bowl, whisk together honey, apple cider vinegar, cinnamon, cumin, salt, and pepper.
  3. Heat olive oil in a large, ovenproof skillet over medium heat. Sear the chicken thighs, skin-side down, until golden brown, about 5-7 minutes. Flip and cook for another 3-4 minutes.
  4. Add sliced apples and dates to the skillet, arranging them around the chicken. Pour the honey mixture over the chicken and fruit.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked and reaches an internal temperature of 75°C (165°F).
  6. Once done, remove the skillet from the oven, and garnish with fresh thyme before serving.
