Roast Beef with Garlic and Rosemary
Ingredients
- 3-4 lbs (1.5-2 kg) boneless beef rib roast or beef tenderloin
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 3 tablespoons olive oil
- 2 teaspoons coarse sea salt
- 1 teaspoon freshly ground black pepper
- 1 cup beef broth (optional, for pan sauce)
- 1 cup red wine (optional, for pan sauce)
Instructions
- Take the beef roast out of the refrigerator and allow it to come to room temperature (about 30 minutes).
- Preheat your oven to 450°F (230°C).
- In a small bowl, mix the minced garlic, chopped rosemary, thyme, olive oil, salt, and pepper to form a paste.
- Pat the beef roast dry and rub the garlic-rosemary paste all over the surface of the meat.
- Place the seasoned roast on a wire rack in a roasting pan. Roast for 15 minutes at 450°F to sear.
- Reduce the heat to 325°F (160°C) and roast until the internal temperature reaches your desired doneness:
- 125°F (52°C) for rare
- 135°F (57°C) for medium-rare
- 145°F (63°C) for medium
- Remove the roast from the oven, tent it with aluminum foil, and let it rest for 15-20 minutes before carving.
- (Optional) Make a pan sauce by simmering beef broth and red wine in the roasting pan, scraping up any browned bits. Serve with the sliced roast beef.
Tips for a Perfect Christmas Roast:
- Resting the meat: Letting the meat rest is crucial to keep it juicy.
- Sides: Serve the roast beef with classic Christmas sides like roasted Brussels sprouts, mashed potatoes, or cranberry sauce for a holiday touch.
