Thai Green Curry with Chicken

Ingredients:
- 1 tbsp vegetable oil
- 2 tbsp green curry paste (adjust for heat)
- 400ml coconut milk
- 300g chicken breast or thigh, sliced thin
- 1 cup broccoli florets
- 1 red bell pepper, thinly sliced
- 1 zucchini, sliced
- 3 kaffir lime leaves (optional)
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1/2 cup Thai basil leaves
- 1 cup jasmine rice (to serve)
- Lime wedges (for garnish)
Instructions:
- Heat the vegetable oil in a large pan over medium heat. Add the green curry paste and fry for 1-2 minutes until fragrant.
- Gradually stir in the coconut milk, mixing it with the curry paste until smooth.
- Add the sliced chicken and cook for 5-6 minutes until no longer pink.
- Add the broccoli, red bell pepper, and zucchini. Simmer for 5-7 minutes until tender.
- Add the fish sauce, brown sugar, and kaffir lime leaves. Stir well and cook for another 2-3 minutes.
- Stir in Thai basil leaves just before serving. Serve hot with steamed jasmine rice and lime wedges.
