Ingredients:

  • 500g lamb shoulder, cut into chunks
  • 2 cups couscous

  • 2 zucchini, sliced
  • 2 potatoes, cubed
  • 1 turnip, cubed
  • 1 cup chickpeas (soaked overnight or canned)
  • 1 tablespoon harissa (optional, for heat)
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 4 cups water or vegetable broth
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the couscous: In a large bowl, place couscous and add 1 tablespoon of olive oil. Pour boiling water over it just to cover the grains. Cover and let it steam for 10 minutes, then fluff with a fork.
  2. Cook the lamb: Heat olive oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides. Remove and set aside.
  3. Cook the vegetables: In the same pot, add the onions and garlic, cooking until soft and fragrant. Add the carrots, zucchini, potatoes, turnip, and chickpeas. Cook for another 5 minutes.
  4. Spice it up: Stir in harissa, cumin, coriander, paprika, salt, and pepper. Add the lamb back to the pot, then pour in the water or broth.
  5. Simmer: Bring the mixture to a boil, reduce heat, and simmer for 45 minutes to an hour until the lamb is tender and the vegetables are cooked.
